In legacy raids you have one shot at the mount per lockout. You can clear the raid once per lockout, regardless of its difficulty (since you're able to change the difficulty while you're in the raid instance).

One of the reasons why some players run a mythic dungeon multiple times is usually during the Dungeon Bonus Event, which offers a quest with the requirement being the completion of 4 dungeons on Mythic difficulty.
